The Techfrost MB40 is a Master line blast chiller and blast freezer, designed and made in Italy, with capacity for 1 trolley 20 trays GN 1/1 – GN 2/1 – EN 600X400 – EN 600X800. Working at -40 °C with indirect airflow over the product, it chills from +90 °C to +3 °C in 90 minutes (100 kg per cycle) and freezes from +90 °C to -18 °C in 240 minutes (70 kg per cycle).
For gelato, a blast freezer hardens the product fast so it forms micro crystals rather than large ice crystals, keeping it smooth and creamy for longer. Techfrost was the first company to develop software to manage the ice cream hardening process in blast chillers.
