Blast freezers and blast chillers. A blast cell is what lets you produce ahead, hold texture and meet food safety requirements instead of working to the day’s orders. For gelato it is the difference between a smooth scoop and ice crystals.
The Techfrost MBF series. Eight models from the MBF420 to the MBF920, from a single trolley of 20 trays up to six trolleys, taking GN 1/1, GN 2/1 and EN 600×400 and 600×800 trays.
Performance. Blast chilling from +90 °C to +3 °C and blast freezing from +90 °C to −18 °C, with per-cycle throughput on each model page. R452A refrigerant, air or hot gas defrost, in 230 V single phase or 400 V three phase.
