Blast freeze for sharp shapes and smooth texture

A Techfrost blast freezer hardens moulded gelato quickly, so it forms small ice crystals, keeps a smooth texture and releases with sharp edges. Gelato hardening from −10 °C to −18 °C takes about 15 minutes.
