What equipment do I need for frozen pastry?

Usually a pastry machine to cook and cool creams, a blast freezer, storage freezers and a pastry display cabinet, plus moulds.

Why do I need a blast freezer for frozen desserts?

Fast freezing forms small ice crystals, so cakes and semifreddo keep a smooth texture and hold their shape. A standard freezer is too slow.

Can one machine make gelato and pastry creams?

Some Carpigiani machines, such as the Maestro HE, make gelato as well as creams and fillings. Ask us which suits your menu.
