Should I use a base and paste or a ready mix? +

A base plus paste gives you the most control over sweetness, texture and flavour, and suits gelato shops with a batch freezer. Ready mixes are complete powders that need only water or milk, which keeps quality consistent with less prep and less training.

What does the dosage on each product mean? +

Dosage is the amount of product to use per litre (or per kilogram) of mix. A paste at 80 g per litre is a flavouring; a complete base at 400–580 g per litre makes up most of the mix.
