Choose a milk base for creamy flavours or a fruit base for sorbet, or skip this step with a ready mix.

Weigh in a classic or fruit paste at the dosage shown on the product.

Freeze the mix in your batch freezer to the texture you want.

Ripple and fold

Layer a ripple sauce, crumble or nuts as you fill the tray.

A ripple sauce is a sauce swirled through gelato as it comes out of the batch freezer, giving ribbons of flavour and colour in every scoop.

Do I need a base as well as a paste? +

Yes, unless you use a ready mix. Pastes add flavour to a base; ready mixes are complete and need only water or milk.

What is a flavouring powder? +

Flavouring powders such as Yoghito Plus, Ricotta Plus and Mascarpone Plus add a concentrated flavour to your base, just like a paste.
