Fruit Pastes
Fruit pastes for gelato and sorbet. Real fruit intensity without the water content that wrecks texture, which is what lets a sorbet scoop cleanly instead of turning to ice.
The range. Tropical, pina colada with and without pieces, mojito, pink grapefruit, raspberry and strawberry with no seeds, and a strawberry milk base — a mix of everyday sellers and the cocktail-led flavours that bring people back to look at the cabinet.
Dosage. Around 50 to 80 g per litre, listed on each product page.
Specifications. Supplied in 2 × 3 kg and 4 × 3 kg cartons. Gluten free, lactose free, vegan, Halal and Kosher options across the range, which makes a dietary-friendly menu straightforward.

Our gelato fruit pastes are concentrated flavourings from Rubicone that you add to a milk or fruit base. They give consistent colour and flavour all year, including fruits that are hard to buy fresh, from everyday Lemon, Orange and Peach to Mango Alphonso, Lychee, Passion Fruit and Taro, plus seedless and cocktail-style options for smooth, modern flavours. Most are used at 80 g per litre in a fruit, sorbet or milk base.

How to use fruit pastes
Choose the base
Use a fruit base for sorbet and dairy-free fruit flavours, or a milk base for creamy fruit gelato.
Weigh the dose
Most pastes in this range list 80 g per litre (65 g per kg) of mix. Banana Java lists 50 g per litre. Always follow the dose on the product page.
Mix and freeze
Blend the paste into the cooled base, then run it through the batch freezer as usual.
Add fresh fruit if you like
Pastes work on their own or alongside fresh fruit to lift colour and keep the flavour steady from batch to batch.
Finish the pan
Pair with a fruit ripple or fruit topping for a pan that looks as fresh as it tastes.

Why use a fruit paste instead of fresh fruit? +
Fresh fruit varies with the season and ripeness. A paste gives the same flavour and colour every batch, and lets you offer fruits that are out of season or hard to source in New Zealand.
Are these pastes vegan? +
Most pastes in this range are marked gluten free, vegan and lactose free on their product pages. Check each product for its full suitability list.
What does No Seeds mean? +
No Seeds pastes, such as Raspberry No Seeds and Strawberry Milk Base No Seeds, are made without seeds for a smooth gelato or sorbet.
Can I use fruit pastes in sorbet? +
Yes. Most of these pastes are described for both gelato and sorbet. Use them with a sorbet or fruit base, sugar and water.
