Start with a white base
Prepare your usual milk base. Limoncina is the exception, made for fruit bases.
Weigh the dose
Doses differ, from 20–30 g per litre for Pannapiu to 80–100 g per litre for Cocoa Plus. Use the dose on each product page.
Blend well
Whisk or blend the powder into the mix so it dissolves fully before freezing.
Freeze and finish
Batch freeze as normal and finish with a matching ripple or topping.

Powder or paste: which should I use? +
Both flavour a white base. Powders are easy to store and dose, while pastes often carry more body and inclusions. Many makers use both.
Can I make yoghurt gelato with Yogo Greek Plus? +
Yes. It brings a fresh yoghurt taste to gelato at 30 g per litre (20 g per kg).
Is Cocoa Plus for hot or cold process? +
The product page describes it for either hot or cold process.
Which powders are vegan? +
Pannapiu, Limoncina, Coffee Plus, Cocoa Plus and Granny’s Cookie are marked vegan on their product pages. Your finished gelato is only vegan if the base is too.
