We stock around 90 Rubicone classic pastes and flavouring powders: pure nut pastes such as Pistachio Pure Sicily and Hazelnut 5 Stars from Piedmont hazelnuts, chocolate and vanilla, Italian dessert flavours, caramels, and fun colours that children love.

Pistachio Pure Sicily, Pistachio Pure Gold, Pistachio Pure No Colour and Pistachio Natur C with grains.
Hazelnut and nuts
Hazelnut 5 Stars, Prelibata, Toasted N and Bonita, plus Almond, Almond Pure, Walnut, Peanut, Macadamia and Nougat/Torroncino.
Chocolate

How to choose and use a paste
Pure or flavoured
Pure nut pastes, such as Pistachio Pure Sicily or Almond Pure, give the most authentic taste. Flavoured pastes give a consistent result at a lower cost.
Colour or no colour
Choose No Colour versions, such as Pistachio Pure No Colour or Vanilla 30 No Colour, for a natural look.
Check the dosage
Most pastes are used at 40–80 g per litre; a few, such as Cassata and Rum & Raisin, are used at a higher dosage.
Use a milk base
Classic pastes are made for milk-based gelato; add them to the base before batch freezing.
Add a ripple
Pair the paste with a matching creamy ripple sauce or crumble for a premium flavour.

What is the difference between a pure paste and a flavouring paste? +
A pure paste is made from the ingredient itself, such as Peanut Gelato Paste from 100% pure peanuts. A flavouring paste is a concentrated flavour that gives the same taste every batch.
How much paste do I add? +
Use the dosage on each product page. Most classic pastes are used at 40–80 g per litre of mix.
Which pistachio paste should I choose? +
Pistachio Pure Sicily is made from Sicilian pistachios with natural colour; Pistachio Pure No Colour has no added colour; Pistachio Natur C includes pistachio grains.
Can I use pastes in soft serve? +
Some pastes, such as Green Mint, are listed for soft serve too. Ask us which pastes suit your soft serve mix.
