From batch to finished dessert

Make the gelato

Use a batch freezer to produce gelato with the right body for moulding.

Fill and level

Pipe or spatula the gelato into the mould, adding inserts, crumble or sauce layers if the design calls for them.

Blast freeze

Set the filled mould quickly in a blast freezer so it releases cleanly.

Demould and finish

Flex the silicone to release, then coat, glaze or decorate.

5

Display and sell

Show the finished product in a freezer display, on Espogel trays or in take-away boxes.

Yes. The families we stock are listed for gelato, ice cream, semifreddo and frozen desserts, and many suit pastry work too.

Why use silicone moulds for frozen desserts? +

Silicone flexes to release frozen product cleanly, so shapes keep sharp edges without heating the mould.

Which mould should I start with? +

Most gelaterias start with a stick mould such as Stecco Flex Classic or a round Torta Flex cake mould, because they use your existing flavours with little extra work.

Do I need a blast freezer? +

It is strongly recommended. Fast freezing sets moulded gelato quickly so it releases cleanly and holds its shape.
