How to choose the right soft serve machine

- Gravity or pump feed: gravity-fed machines produce a dry, compact soft serve with up to 40% overrun; pump-fed machines let you set 40–80% overrun for a lighter product and a higher yield.

- Self-pasteurising (SP) models: heat-treat the mix inside the machine, so you can go longer between full cleans (interval depends on the model).
